What is the link to the latest shawnD wheel database?
I am buying a set of 16" style 5's from a E38 and have a ET of 23. I want to find out if the center bore is good as is or is it like the E39 center bore and require centering rings. I have a set of centering rings to fit E39 rims already.

Assuming that they're either 7 or 7.5 inch width, they'll fit your hub fine, but if you go with 225/50-16 tires they're going to be close to the rear fender lip, depending on the tire's edge sharpness. You'll probably have to do a little bit of fender trimming, but not much.
Here's 16x7's with 20mm offset, stock height on the left, lowered on the right. My rear fenders may have been trimmed by the PO to fit M5 wheels and tires.

They are a 8Jx16 ET:23 They are take offs, the guy I am buying them from upped to the M-parallel rims. They have a set of Continental tires on them with good tread, but I have seen them yet, going tomorrow.
He wasnt sure what size they were, he said 235 70 16, I dont think that is correct.
Stock was a 235/60 R 16 100W with Continental ContiTouringContact CH95
Stock ride height.

You definitely don't want the stock E38 tires. The wheels will work. On a 16x8 rim, the narrowest you can go is 205/55-16; that works fine and will not rub, but you'll have NO curb protection! I am moving up to 225/50-16 when the summer wheels go back on with fresh tires, and I'm prepared to roll or trim the fender if necessary.

I run Kumho Ecsta MX (wide end of the spectrum), and they rub the strut housing in the front and used to rub the fender lip in the back before a little trim job. The rubbing in the front is minor, but a 5 mm spacer would be ideal.

Both of those tire sizes are too tall, 225/50-16's or 205/55-16's are the correct height and the maximum width tire you can run without substantial mods and/or spacers. Your 23mm offset is a plus, particularly up front. A 235/60-16 is a whopping 27 inches in diameter and a 235/70-16 is a light truck tire and even larger. The stock diameter of tires for an e28 is 24.8 inches plus or minus 0.2 inches.
The specs for the Yokohama AVS sports in the photo I posted above are:
225/50WR16 wear rating 220 AA Rim widths 6-8" Measuring rim 7" Section width 9.1"
Tread width 7.9" Diameter 24.8" Just for an example.
I'd suggest going to http://www.tirerack.com/tires/SearchTires.jsp and doing a search in both 205/55-16 and 225/50-16 and seeing what you come up with, there's quite a few tires in those sizes.
