Blunt/Steve at http://www.blunttech.com/ was offering vinyl- or leather-covered dashes for 2002s. Maybe he has a solution for the E28.

Man this car is so beautiful, I've got a 1985 BMW 535i in the same color and I wish I could replicate yours. I'll try... If not would ever consider selling yours? This car is a masterpiece.
