Suggestions for m88 turbo engine mgmt & good BMW tuner in NC

I plan to scrap the Dinan "turbotronics" system on my m88 turbo. The car holds boost great, and has gobs of power, but I'd like full control of the car, and insight onto what's going on inside the motor under all conditions. (I'd also love to add water injection at some point, as I live in a hot climate 8 months out of the year.)

A) What's the most user friendly kit for engine/fuel mgmt? MS? Other?

B) Who in North Carolina (or nearby) would you trust to this task, and why?
