Would be cool to swap. But the e34 is really not so far gone that it deserves to be torn down. Then again, as Chris notes, they are not worth much in the open market anyhow....
Which leaves the Park It option. That's the right thing to do. Circle back at a later date and make it right? Or, provided you have no deep emotional attachment, find a home that will follow a similar path.
I think I was the first to know about this project. I was told to "keep it under my hat" but I guess Sherman has a hard time doing that himself.
I voted "park it" only because I know of 2 S38 blocks for sale ready to be built up. 1 is a bare block perfect for a complete build and the other is mostly complete, should be missing the head and cams sometime soon , but needs a rebuild. IMO if your going through the trouble of doing a swap, might as well build a motor for it. It will add $$$ to the project but make it that much more special.

The reason I didn't buy this car when I was told about it (by the person you bought it from before he picked it up) was that I didn't want it to get parted out. I don't think it is right to part out a perfectly good hand built M5 just for the drivetrain, especially after seeing what Ed Locke went through to save one that most people would write off. As I said, though, if you do I am interested in the remains.

What about the e34 Touring? Since that's what he was considering swapping the drivetrain into, the e32 was an alternative suggestion to that. I know of some guy named Kenny who has an e23 with an S38, pushes it around the track like a fat man in a tracksuit.
