I've been remiss in ordering mine but it looks like I will have an engine to bolt it to so...are there any of the zinc coated left?

FWIW, I agree with Kyle that the bent flat steel may not be as strong, and hence more prone to bending, than the original c-channel. Some gusseting (?) in the area of the bends would substantially increase the strength, but of course would also substantially increase the cost.
Has anyone tried using both brackets together?

For 30 bucks, I'll take a chance. Ordered a powder coated one today.
