What is the main mineral that causes one not to use regular water and to use distilled water in cooling systems?

I'll post some pictures tonight of what my radiator core looks like after the previous owner of my car did not use distilled water. There is also evidence of this in the thermostat housing, inside the hoses, and on the end tanks inside the radiator.
